食材份量 Ingredients (四人份量 4 people portion)
两件鸡扒540克 540g chicken
两只青红辣椒(小辣) 2 medium heat chillies
两只红葱头(切一半拍松) 2 shallots (halved and gently crushed)
六片姜 6 ginger slices
四粒蒜头(切片) 4 garlic cloves (sliced)
适量芫荽葱 Handful of coriander & spring onion
腌鸡材料 Chicken marinade:
半茶匙盐 1/2 tsp salt
1/6茶匙胡椒粉 1/6 tsp ground pepper
1½茶匙生粉 1½ tsp potato starch
调味料 Seasoning:
一汤匙柱候酱 1 TBS Chu Hou sauce
半件南乳 1/2 piece of red fermented bean curd
半茶匙糖 1/2 tsp sugar
一茶匙蚝油 1 tsp oyster sauce
一汤匙绍兴酒 1 TBS Shaoxing wine
一茶匙麻油 1 tsp sesame oil
二百毫升水 200ml water
生粉水: Sauce thickener:
1½茶匙生粉加1汤匙水 1.5 tsp potato starch mix with 1 TBS water
