【新唐人北京時間2018年09月22日訊】鎮江糖醋排骨,是一道很聞名的菜式,很美味的做法,吃多碗飯哦。

鎮江糖醋排骨 Fried Spare ribs in Chinkiang Style

材料 – Ingredients:

小肉排 2 磅- 2 lbs of spare rib. Cut into 1-inch sections

薑 3 大片 – 3 slices ginger

冰糖 1 大粒 – 1 chunk of rock sugar

鎮江醋半杯 – 1/2 cup of Chinkiang vinegar

紹酒 6湯汤匙 – 6 tbsp of Shaoxing cooking wine

老抽 1.5 湯匙 – 1 1/2 tbsp of dark soy sauce

雞粉1湯匙 (用否隨意) – 1 tbsp of Chicken powder (Optinal)

白胡椒粉少許 – Pinch of white pepper powder

芝麻油少許 – Pinch of sesame oil

白芝麻粒少許 – Pinch of roasted white sesame

清水半杯 – Half cup of water

做法:

1. 肉排切约吋餘長段. 將肉排汆水,沖洗乾淨瀝乾待用

2. 用 2 汤匙生油爆薑片刻,然後加入肉排爆香

3. 加入紹興料酒及老抽略炒片刻

4. 加入鎮江醋、冰糖及雞粉翻炒片刻,加入清水並蓋上鍋蓋,改為小火燜煮至腍

5. 改大火煮至收汁起膠

6. 加入少許白胡椒粉及芝麻油

7. 盛碟並灑上白芝麻便成

Method:

1. Cut spare ribs into 1-inch sections, scald with boiling water for a while.

2. Take out the spare ribs and wash under running water, drain well.

3. Saute gingers with 2 tbsp cooking oil. Add in spare ribs and stir well.

4. Add Shaoxing cooking wine and dark soy sauce, stir well.

5. Add Chinkiang vinegar, rock sugar and chicken powder, then add water.

6. Bring to boil, braise over low heat untill ribs become tender and sauce thickens.

7. Add pinch of white pepper powder and sesame oil.

8. Dish up, sprinkle with roasted white sesame.
