材料 Ingredients :

一隻白或青苦瓜(400g) 1 white/green bitter melon (400g)
牛肉200g Rump beef 200g
炸菜40g Salted cabbage 40g
4粒蒜頭(切片) 4 garlic cloves (slices)
2-3 粒蒜頭(切碎) 2-3 garlic cloves (diced)
1個紅蔥頭(切片) 1 shallot (slices)
幾片紅蘿蔔花 A few pieces of decorative carrot pieces

牛肉調味料: Beef marinade:

2茶匙生抽 2 tsp soya sauce
2茶匙蠔油 2tsp oyster sauce
2茶匙糖(1茶匙牛肉用,另1茶匙苦瓜用)2 tsp sugar: 1 tsp for beef, 1 tsp for bitter melon
2茶匙生粉+2湯匙水 2 tsp potato starch, 2 TBS water

五香粉1/6茶匙 1/6 tsp Chinese five spice
¼茶匙胡椒粉 1/4 tsp ground black pepper
麻油2茶匙 2 tsp sesame oil
1湯匙紹興酒 1 TBS Shaoxing wine
2茶匙魚露 2 tsp fish sauce
打茨用的:1茶匙生粉+2湯匙水 1 tsp potato starch + 2 TBS water
適量油 Some cooking oil
